As a stay-at-home parent, finding the time and energy to craft a delicious and nutritious home-cooked meal can be a challenge. That’s why having a few go-to recipes that you can whip up quickly is essential. One of my favorite dishes to make on busy days is fried rice with vegetable stir-fry and eggs. Not only is it easy to make, but it’s also packed with flavor. And best of all, my family loves it!
Ingredients:
• 1 tablespoon vegetable oil
• 2 cloves garlic, minced
• 1 teaspoon fresh ginger, grated
• ½ cup onion, diced
• 1 cup cooked rice
• 2 cups mixed vegetables (I like to use carrots, broccoli, bell peppers, and mushrooms)
• 2 eggs
• 2 tablespoons soy sauce
• Salt and pepper to tasteInstructions:
1. Heat the oil in a large skillet over medium heat. Add the garlic, ginger, and onion, and sauté for about 3 minutes until the vegetables are tender.
2. Add the cooked rice and vegetables to the skillet and cook for another 5 minutes until everything is heated through.
3. Push the vegetables and rice aside, making a small well in the pan. Crack the eggs into the well, season with salt and pepper, and scramble them until cooked through.
4. Once the eggs are cooked, mix them together with the vegetables and rice.
5. Finally, add soy sauce to taste and cook for another minute or two until everything is combined and heated through.
