Grilled Pork Belly Tacos: A Delicious Stay-At-Home Parent Recipe
As a stay-at-home parent, it can be difficult to find the time to prepare a delicious, healthy meal for your family. Ingredients:
2 lbs pork belly
1/2 onion, thinly sliced
3 cloves of garlic, minced
2 tablespoons olive oil
1 tablespoon dried oregano
1 teaspoon ground cumin
2 tablespoons freshly squeezed lime juice
1/2 teaspoon chili powder
Salt and pepper to taste
6 flour tortillas
Optional toppings: cilantro, diced tomatoes, diced onion, sour cream
Instructions:
1. Preheat your grill to medium heat. Rub the pork belly with the olive oil and season with oregano, cumin, chili powder, salt and pepper. Place the pork belly on the preheated grill and cook for 10 minutes on each side or until cooked through. Once cooked through, remove from heat and slice into thin strips.
2. In a separate skillet over medium heat add the remaining olive oil and sauté onion until softened. Add garlic and sauté an additional 2 minutes or until fragrant. Add pork belly strips to the skillet and cook for 3-4 minutes or until warmed through. Add lime juice to the skillet and stir everything together.
3. To assemble tacos: Place 1-2 tablespoons of the pork belly mixture onto each tortilla. Top with additional desired toppings such as cilantro, diced tomatoes and onions or sour cream if desired. Beef Fajita Tacos – A Parent’s Quick and Delicious Dinner
As a stay at home parent, I know just how difficult it can be to come up with dinner ideas that are both quick and tasty. One of my favorite recipes to make is beef fajita tacos. The tacos are flavorful, easy to make and the kids absolutely love them. All you need is some fresh ingredients and a few minutes of work.
Ingredients
1 pound of lean ground beef
1 onion, sliced into thin strips
3 bell peppers (any color), sliced into thin strips
2 cloves of garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
8-10 taco shells (hard or soft)
Optional: Shredded cheese, lettuce, salsa or sour cream for topping
Instructions1. Heat a large skillet over medium-high heat and add the ground beef. Use a wooden spoon to break up the beef as it cooks. Once the beef is cooked through, drain off any extra fat and remove from the skillet.
2. To the same skillet, add the onions and peppers. Cook until they become tender, about 5 minutes. Add the garlic and cook for an additional minute.
3. Return the cooked beef to the skillet with the vegetables and stir in the chili powder, cumin, onion powder, garlic powder, salt and pepper. Stir everything together until combined and cook for an additional 2-3 minutes until everything is heated through.
4. To assemble your tacos, place some of the beef-vegetable mixture in each taco shell then top with your desired toppings (shredded cheese, lettuce, salsa or sour cream). Serve warm and enjoy!

When I was growing up in Texas one of my favorite meals was beef fajita tacos from my mom’s kitchen. She would make them almost every week for us kids as a special treat! Now that I’m a parent myself I often make this same recipe for my own family – it’s a great way to get everyone involved in dinner time!
