    Fried Tofu with Sweet and Spicy Sauce

    As a stay at home parent, I am always looking for easy and delicious recipes to make for my family. Fried tofu with sweet and spicy sauce is one of our favorites. Not only is it quick and easy to make, but it is also packed with flavor. The sweet and spicy sauce pairs perfectly with the crispy fried tofu, making it a great meal that everyone in my family enjoys.

    I always start by preparing the ingredients for the dish. I use firm tofu, which I cut into cubes before frying. I also mix together a simple sweet and spicy sauce which consists of honey, soy sauce, garlic, chili powder, and sesame oil. For added crunch and texture, I like to add some chopped peanuts to the sauce.

    Once all of my ingredients are prepped, I heat up some oil in a large skillet over medium-high heat until it’s hot. Then, I add the tofu cubes and fry them until they are golden brown and crispy on all sides. This usually takes about five minutes per side. Once the tofu is cooked through, I remove it from the skillet and set it aside on a paper towel-lined plate to absorb any excess oil.

    Next, I reduce the heat on my skillet to medium-low and add my sweet and spicy sauce to the pan. I cook it for 1-2 minutes until it starts to bubble before adding the fried tofu back into the pan and tossing everything together until everything is well coated in the sauce.

    Once everything is combined, I serve up the fried tofu with its sweet and spicy sauce right away while it’s still hot. My kids love this dish so much that they often ask for seconds!

    Ingredients:
    -1 block of firm tofu
    -1/4 cup honey
    -1/4 cup soy sauce
    -2 cloves garlic, minced
    -1 teaspoon chili powder
    -1 teaspoon sesame oil
    -2 tablespoons chopped peanuts
    -Vegetable oil for frying

What’s more is that this dish tastes even better the next day – making it a great dish to make ahead and reheat for a quick weeknight meal.

    Ingredients:
    • 1 tablespoons butter
    • 2 tablespoons olive oil
    • 1 cup onion, diced
    • 1 red pepper, diced
    • 2 cloves garlic, minced
    • 2 cups vegetable broth
    • 2 cups potatoes, diced
    • 1 cup corn kernels
    • 1 teaspoon smoked paprika
    • ½ teaspoon cayenne pepper
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 can (14 ounces) coconut milk or cream
    • 1 pound cooked shrimp, chopped
    • Juice of 1 lime

    Instructions:
    1. Heat a large pot over medium heat and add butter and olive oil. When melted, add onion and red pepper and cook until softened, about 5 minutes. Add garlic and cook for an additional minute.
    2. Pour in vegetable broth, potatoes, corn kernels, smoked paprika, cayenne pepper, salt and black pepper. Cover the pot and bring to a boil before reducing heat to low. Simmer until potatoes are tender, about 10 minutes.
    3. Pour in coconut milk or cream and stir until combined. Add in cooked shrimp and lime juice and cook until heated through, about 5 minutes. Serve hot with your favorite garnishes or toppings such as fresh parsley or sliced jalapeños. Enjoy!

    Story: I was first introduced to this Shrimp and Corn Chowder recipe by my grandmother when I was a young stay-at-home parent. She was always looking for ways to feed her grandkids something delicious but also quick enough that I could make it after getting home from work or picking up my kids from school. One night she whipped up this amazing chowder with shrimp she had caught earlier that day from a nearby lake – it was an instant hit with our family! The creaminess of the coconut milk combined with the smokiness of the paprika created a flavor we all enjoyed immensely. Since then I have continued to make this recipe for my family whenever I need something fast yet tasty for dinner – it’s always a hit!

    Pho: An Easy and Delicious Recipe to Try at Home

    As a stay-at-home parent, it can be challenging to find time to create a delicious and nutritious meal for the family. That’s why I am so excited to share with you all this easy and delicious Pho recipe that is sure to become a family favorite. Not only is it simple to prepare, but it is also incredibly flavorful, healthy, and is just the perfect meal for a cozy night in with the family.

    Ingredients:
    • 8 cups of chicken or vegetable broth
    • 1 onion, sliced
    • 2 cloves of garlic, minced
    • 1 teaspoon of fresh ginger, grated
    • 2 tablespoons of fish sauce
    • 1 tablespoon of brown sugar
    • 1 teaspoon of ground coriander
    • 1 teaspoon of ground cinnamon
    • 2 tablespoons of vegetable oil
    • ½ pound of rice noodles
    • 2 cups of julienned carrots
    • 2 cups of bean sprouts
    • 2 cups of thinly sliced mushrooms
    • 2 limes, cut into wedges
    • Fresh cilantro leaves, chopped
    • Fresh basil leaves, chopped
    • 1 jalapeño pepper, sliced
    • Sriracha sauce (optional)

    Instructions:

    1. Heat the vegetable oil in a large pot over medium-high heat. Add the onion and garlic and sauté until fragrant, about 2 minutes.

    2. Add the ginger, coriander and cinnamon and sauté for another minute. Then add the chicken or vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes.

    3. Add the fish sauce and brown sugar to the pot and stir until combined. Then add the rice noodles and cook for 5 minutes or until softened.

    4. Divide the noodles between 4 bowls and top each bowl with carrots, bean sprouts, mushrooms, cilantro leaves, basil leaves, jalapeño pepper slices and lime wedges. Ladle the hot broth over each bowl and serve immediately with sriracha sauce on the side (optional). Enjoy!

    I was first introduced to Pho when my family immigrated from Vietnam to Canada when I was 8 years old. My mom would make us this delicious soup every Sunday night after church as a special treat for us kids. We would eagerly await her arrival home from church so we could gather around the dinner table to enjoy her famous Pho recipe! Even though we may not be able to gather around our dinner table as often as we used to due to our hectic schedules these days, I still enjoy making this easy Pho recipe as a way to reconnect with my roots while creating lasting memories around our dinner table that my kids will cherish for years to come.
