Grilled Shrimp with Cilantro and Lime

As a stay at home parent, I often find myself searching for creative, healthy recipes that my whole family will enjoy. This grilled shrimp with cilantro and lime is one of our favorites. It’s easy to make and only requires a handful of ingredients that you likely already have in your pantry. Plus, it’s packed with flavor! My kids love it and it’s always a hit when I serve it to company.

    Ingredients:
    • 1 pound of large shrimp, peeled and deveined
    • 2 cloves of garlic, minced
    • 2 tablespoons olive oil
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • 1/4 teaspoon salt
    • 1 tablespoon freshly squeezed lime juice
    • 2 tablespoons chopped cilantro
    Instructions:
    1. Preheat the grill to medium-high heat. If you don’t have a grill, you can cook the shrimp in a skillet on the stovetop over medium-high heat.
    2. In a medium bowl, mix together the garlic, olive oil, cumin, chili powder, salt and lime juice to form a marinade. Add the shrimp to the bowl and stir until all of the pieces are coated in marinade.
    3. Thread the shrimp onto metal skewers or wooden skewers that have been soaked in water for at least 30 minutes.
    4. Place the skewers on the preheated grill and cook for 2-3 minutes per side, or until the shrimp are cooked through. Be sure to turn them halfway through cooking so they don’t burn.
    5. Remove the skewers from the grill and transfer to a serving plate. Sprinkle with chopped cilantro and an extra squeeze of fresh lime juice before serving. Enjoy!

As a stay at home parent, I understand how difficult it can be to come up with new meal ideas that everyone in your family will enjoy. This grilled shrimp with cilantro and lime has quickly become one of our favorites! It has just enough spice to keep things interesting without being too overwhelming for my kids’ palates – plus, it only takes about 15 minutes to make from start to finish!

I always look forward to grilling season because it means I get to make this delicious recipe more often! It’s such an easy way to add a ton of flavor to our meals without spending too much time in the kitchen – plus, who doesn’t love anything cooked on the grill? The slight smokiness that grilling adds is so flavorful and always puts a smile on my family’s faces when they see this dish as part of our dinner spread!

One summer day when I was getting ready to prepare this recipe for dinner, I had an unexpected visitor at my door – my neighbor’s son who had been visiting from out of town! He was absolutely starving after his long journey and I didn’t want him to go hungry while he waited for his parents to arrive home from work so I invited him inside and offered him some snacks while I prepared dinner for my family (and him!). As soon as he caught a whiff of the succulent shrimp cooking on the grill he exclaimed “This smells amazing! Can I have some?” Of course I said yes – after all, there was plenty for everyone – so we all sat down together at the table and enjoyed this delicious dish! It was such an unexpected surprise – but one that we will never forget!

This grilled shrimp with cilantro and lime is one of those meals that will always have a special place in my heart. Not only is it quick, easy and delicious – but it also reminds me of my unexpected visitor that summer day years ago when he enjoyed this dish as if it were his own family’s recipe! Whenever I make this dish now, I can’t help but think back fondly on that moment when he shared our table – something that would not have happened if not for this wonderful grilled shrimp recipe!
