Chicken Parmesan Recipe For The Stay At Home Parent

There’s nothing better than a delicious home-cooked meal after a long day of parenting. Chicken Parmesan is a classic Italian dish that is both easy to prepare and satisfying to eat. This recipe is sure to become a family favorite.

Ingredients:

-4 boneless, skinless chicken breasts
-1 cup Italian-style bread crumbs
-1/2 cup grated Parmesan cheese
-2 eggs
-1 teaspoon garlic powder
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/4 cup olive oil
-1 (28 ounce) can crushed tomatoes
-3 cloves garlic, minced
-2 teaspoons dried oregano
-2 teaspoons dried basil
-1 cup shredded mozzarella cheese
Instructions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.

2. Place chicken breasts in the baking dish. In a medium bowl, mix together the bread crumbs, Parmesan cheese, eggs, garlic powder, salt and pepper until well blended. Dip each chicken breast in the egg and bread crumb mixture until each breast is fully coated. Drizzle with olive oil and bake for 25 minutes in the preheated oven, or until chicken is cooked through and juices run clear.

3. In a large skillet over medium heat, combine the crushed tomatoes, garlic, oregano and basil. Simmer for 10 minutes, stirring occasionally. Pour over the chicken breasts. Sprinkle with mozzarella cheese and bake for an additional 10 minutes, or until cheese is melted and bubbly. Serve with your favorite sides or over pasta. Enjoy!
