"Create Delicious Pho at Home - The Perfect Quarantine Recipe for Busy Parents!"
Pho: An Easy and Delicious Recipe to Try at Home As a stay-at-home parent, it can be challenging to find time to create a delicious and nutritious meal for the family. That’s why I am so excited to share with you all this easy and delicious Pho recipe that is sure to become a family favorite. Not only is it simple to prepare, but it is also incredibly flavorful, healthy, and is just the perfect meal for a cozy night in with the family. Ingredients: • 8 cups of chicken or vegetable broth • 1 onion, sliced • 2 cloves of garlic, minced • 1 teaspoon of fresh ginger, grated • 2 tablespoons of fish sauce • 1 tablespoon of brown sugar • 1 teaspoon of ground coriander • 1 teaspoon of ground cinnamon • 2 tablespoons of vegetable oil • ½ pound of rice noodles • 2 cups of julienned carrots • 2 cups of bean sprouts • 2 cups of thinly sliced mushrooms • 2 limes, cut into wedges • Fresh cilantro leaves, chopped • Fresh basil leaves, chopped • 1 jalapeño pepper, sliced • Sriracha sauce (optional) Instructions: 1. Heat the vegetable oil in a large pot over medium-high heat. Add the onion and garlic and sauté until fragrant, about 2 minutes. 2. Add the ginger, coriander and cinnamon and sauté for another minute. Then add the chicken or vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes. 3. Add the fish sauce and brown sugar to the pot and stir until combined. Then add the rice noodles and cook for 5 minutes or until softened. 4. Divide the noodles between 4 bowls and top each bowl with carrots, bean sprouts, mushrooms, cilantro leaves, basil leaves, jalapeño pepper slices and lime wedges. Ladle the hot broth over each bowl and serve immediately with sriracha sauce on the side (optional). Enjoy! I was first introduced to Pho when my family immigrated from Vietnam to Canada when I was 8 years old. My mom would make us this delicious soup every Sunday night after church as a special treat for us kids. We would eagerly await her arrival home from church so we could gather around the dinner table to enjoy her famous Pho recipe! Even though we may not be able to gather around our dinner table as often as we used to due to our hectic schedules these days, I still enjoy making this easy Pho recipe as a way to reconnect with my roots while creating lasting memories around our dinner table that my kids will cherish for years to come.
