Chicken and Mushroom Soup Recipe
Ingredients:
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
4 celery stalks, diced
4 carrots, diced
2 chicken breasts (skinless and boneless), cubed
8 ounces mushrooms, sliced
1 teaspoon dried thyme
1 teaspoon dried oregano
6 cups chicken broth
2 tablespoons cornstarch
Salt and pepper to taste
2 tablespoons fresh parsley (optional)
As a stay-at-home parent, I am always looking for easy recipes that will please the whole family. My go-to recipe is a comforting classic: Chicken and Mushroom Soup. This soup is hearty, flavorful, and so easy to make. Plus, it’s full of healthy ingredients like vegetables and lean protein. It’s a one-pot meal that you can whip up in just 30 minutes!
To start making this delicious soup, heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook until fragrant, about 2 minutes. Next, add the celery, carrots and chicken breasts to the pot. Cook for 5 minutes until the chicken is lightly browned. Then add the mushrooms and herbs to the pot and cook for another 5 minutes until the vegetables are softened.
Now it’s time to add the broth! Pour in 6 cups of chicken broth and bring the mixture to a simmer. In a small bowl, whisk together 2 tablespoons of cornstarch with 1/4 cup of water until there are no lumps. Pour this mixture into the pot and stir until thickened. Finally, season with salt and pepper to taste.
At this point, you can serve up your delicious soup! To make it extra special, sprinkle it with chopped fresh parsley if desired. Serve with a side of crusty bread or crackers for a complete meal that’s sure to please everyone in your family.
This recipe has been in my family for generations – my grandmother used to make it all the time when I was growing up!
