“Easy, Delicious Beef Verde Recipe for Parents Who Need Quick Meals at Home!”

Beef Verde with Corn Tortillas
As a stay at home parent, I know the importance of having quick, easy and delicious recipes that I can whip up in a matter of minutes. Today I’m sharing my favorite recipe for beef verde with corn tortillas. Not only is this meal flavorful, it’s also incredibly easy to make!
When I think of beef verde, I think of my favorite childhood memory. When I was a kid, my abuela used to make this meal for me every Sunday after church. She’d start by browning the beef and then simmering it in a pot with green chilies and tomatoes. The smell of the food cooking was always so tantalizing, and it took all my willpower not to sneak a bite before she was done!
To make this recipe you’ll need the following ingredients:
• 2 pounds ground beef
• 2 tablespoons olive oil
• 1 onion, diced
• 2 cloves garlic, minced
• 2 cans diced tomatoes
• 2 cans green chilies
• 1 teaspoon cumin
• 1 teaspoon oregano
• 1 teaspoon paprika
• Salt and pepper to taste
• 12 – 14 corn tortillas
• Shredded cheese (optional)
• Sour cream (optional)
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned. Drain off any excess fat.
2. Add the onion and garlic and cook for 3-4 minutes until softened.
3. Add the diced tomatoes, green chilies, cumin, oregano, paprika, salt and pepper to the skillet and stir to combine. Simmer for 15-20 minutes until the sauce has thickened slightly. 4. Heat 12-14 corn tortillas in a dry skillet over medium heat until lightly browned (about 1 minute per side). Serve the beef verde with warm tortillas and top with shredded cheese or sour cream if desired. Enjoy!
