Shrimp and Corn Chowder with Bacon – A Delicious and Easy Recipe to Make at Home As a stay-at-home parent, I’m always looking for easy recipes to make for my family. I recently came across a delicious and easy recipe for shrimp and corn chowder with bacon that I’d like to share with you. The comforting flavors of the soup make it a perfect meal for any time of year. This shrimp and corn chowder recipe is simple to prepare, and the ingredients are easy to find. You’ll need 2 pounds of peeled and deveined shrimp, 2 tablespoons of olive oil, 1 onion, diced, 2 cloves of garlic, minced, 4 cups of chicken broth, 1 teaspoon of dried thyme, 1 bay leaf, 1 cup of frozen corn kernels, 2 tablespoons of all-purpose flour, 1 cup of half-and-half cream, 1 cup of shredded cheddar cheese, 1/2 teaspoon of salt, and freshly ground black pepper to taste. For garnish you’ll need 3 slices of cooked bacon chopped into small pieces. To begin, heat the olive oil in a large pot over medium-high heat. Add the diced onion and garlic and cook until the onion is soft and translucent. Add the chicken broth, thyme and bay leaf and bring to a boil. Reduce the heat to low and simmer for 10 minutes. Add the shrimp and corn kernels and cook for 5 minutes or until the shrimp are cooked through. In a small bowl whisk together the flour and half-and-half cream until smooth. Slowly add this mixture to the pot while stirring constantly until it comes to a boil. Add the cheddar cheese, salt, and pepper; stir until cheese is melted completely. Serve warm with bacon crumbles on top as a garnish. This recipe has been part of my family for many years now; it was first given to us by my grandmother who used to make it when I was just a child.
