We had been invited to a family dinner, but I was feeling overwhelmed at the thought of juggling cooking, childcare, and everything else that comes along with being a stay-at-home parent. That’s when my sister-in-law came to the rescue with this simple yet tasty dish. It was an immediate hit – not only with the adults, but with the kids too! Since then, I’ve come to rely on this beef and squash casserole as an easy way to enjoy home cooked meals without sacrificing valuable time or energy.
