Beef and Squash Casserole – A Perfect Stay-at-Home Parent Meal
As a stay-at-home parent, it can be difficult to find the time and energy to prepare delicious, home cooked meals. That’s why I love this easy and delicious beef and squash casserole. Not only is it nutritious and filling, but it’s also simple enough to prepare even on the busiest days. I first discovered this recipe when my oldest daughter was just a toddler. We had been invited to a family dinner, but I was feeling overwhelmed at the thought of juggling cooking, childcare, and everything else that comes along with being a stay-at-home parent. That’s when my sister-in-law came to the rescue with this simple yet tasty dish. It was an immediate hit – not only with the adults, but with the kids too!
Since then, I’ve come to rely on this beef and squash casserole as an easy way to enjoy home cooked meals without sacrificing valuable time or energy. It’s full of flavor and nutrition thanks to the lean ground beef and freshly chopped squash. The addition of tomato sauce and cheese adds an extra layer of flavor that everyone loves.
Ingredients:
• 1 lb lean ground beef
• 2 cups chopped squash
• 1 (15 oz) can tomato sauce
• 1 cup shredded cheese
• Salt & pepper to taste
• Chopped fresh parsley (optional)
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large skillet over medium heat, cook beef until no longer pink; drain fat.
3. Place beef in a greased 9×13 inch baking dish. Top with chopped squash. Pour tomato sauce over top. Season with salt and pepper, if desired.
4. Bake in preheated oven for 25 minutes or until squash is tender.
5. Sprinkle cheese over casserole and continue baking for 5 minutes or until cheese is melted and bubbly.
6. Sprinkle with parsley before serving, if desired. Enjoy!
