Ingredients: -1 pound of peeled and deveined medium shrimp -2 tablespoons of olive oil -2 cloves of garlic, minced -1 teaspoon of dried oregano -1 teaspoon of ground cumin -1 28 ounce can of diced tomatoes with juice -2 cups of chicken broth -1/4 cup of white wine (optional) -Salt and pepper to taste -Chopped fresh parsley for garnish (optional) Instructions: 1. Heat the olive oil in a large pot over medium heat. Add the garlic, oregano, and cumin and sauté for 1 minute. 2. Add the diced tomatoes and their juice to the pot and bring to a boil. Reduce heat to low and simmer for 10 minutes. 3. Add the chicken broth, white wine (if desired), and shrimp to the pot. Simmer until the shrimp are cooked through, about 5 minutes.
