Ingredients:

-2 cups of cooked short grain rice

-2 tablespoons of sugar
-2 tablespoons of rice vinegar
-6 sheets of nori seaweed

-1 avocado, sliced into thin strips
-1 cucumber, sliced into thin strips
-1/4 cup of prepared sushi ginger
-Wasabi paste
-Low sodium soy sauce (for dipping)

Instructions:
1. Cook the sushi rice according to the package instructions. When finished cooking, combine the sugar and vinegar in a small bowl and mix together until the sugar is dissolved. Add this mixture to the cooked rice and stir until well combined. Spread the rice on a large plate or tray and let cool for about 10 minutes.
2. Lay a sheet of nori on a bamboo rolling mat. Spread 1/4 cup of the prepared sushi rice over the nori, leaving about an inch of space at one end. Layer desired fillings (imitation crabmeat, avocado, cucumber) over the rice in an even layer.
3. Starting from the end closest to you, use your fingers to roll up the bamboo mat tightly so that all of the ingredients are wrapped inside of the nori sheet. Gently squeeze as you roll so that all of your ingredients stay in place inside your roll.
4. Once your roll is finished, use a sharp knife to cut it into 8 pieces. Serve with prepared sushi ginger, wasabi paste, and low sodium soy sauce for dipping!
