Vegetable and Tofu Stir-Fry with Spicy Sauce: A Recipe for Busy Stay-at-Home Parents As a stay-at-home parent, it can be difficult to find the time to make a healthy and delicious meal for your family during the week. That’s why I love this Vegetable and Tofu Stir-Fry with Spicy Sauce. It’s a great way to get a balanced meal on the table quickly and easily. Plus, the spicy sauce adds an extra kick of flavor! Ingredients: -1 tablespoon olive oil -1 onion, chopped -2 cloves of garlic, minced -1 bell pepper, chopped -1 cup of mushrooms, sliced -1 cup of carrots, sliced -1 cup of spinach -2 cups of firm tofu, cubed -2 tablespoons soy sauce -3 tablespoons sriracha or chili garlic sauce -1 tablespoon sesame oil Instructions: 1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes. Add the bell pepper, mushrooms, carrots, and spinach. Cook until vegetables are tender, about 5 minutes. Add the cubed tofu and cook for an additional 5 minutes. 2. In a small bowl whisk together the soy sauce, sriracha or chili garlic sauce, and sesame oil to create the spicy sauce. Pour over the stir fry mixture in the skillet and cook for an additional 2 minutes until heated through. Serve over cooked rice or noodles if desired. Enjoy!
