There’s something about the creamy grits combined with the savory shrimp that has always kept me coming back for more. I like to think of this dish as comfort food at its finest! My version of shrimp and grits is simple yet flavorful. I start by sautéing garlic and onion in some olive oil until they become fragrant. Then I add in some bacon, diced tomatoes, and white wine, allowing the flavors to meld together as they cook. Once the bacon is cooked through, I add in the shrimp and let them cook until they turn pink. Finally, I stir in a few tablespoons of butter along with some fresh herbs before adding the cooked grits to the pan. The result is a savory and comforting dish that will please even the pickiest eaters! The ingredients you need for this recipe are simple: bacon, garlic, onion, tomatoes, white wine, shrimp, butter, fresh herbs (I like to use parsley), and grits. To start off your meal prep process, begin by preparing your grits according to package instructions. While those are cooking, you can move on to prepping your other ingredients. Once everything is ready to go, you can begin cooking your shrimp and grits on the stovetop. Making this delicious dish brings back so many fond memories of growing up in the South. Ingredients: • 4 slices bacon • 2 cloves garlic • 1 small onion • 1 can diced tomatoes • ½ cup white wine • 1 lb raw shrimp • 2 tablespoons butter • 2 tablespoons chopped fresh parsley • 2 cups cooked grits Instructions: 1. Begin by preparing your grits according to package instructions. Set aside when finished cooking. 2. Heat a large skillet over medium heat then add bacon slices. Cook until bacon is crisp then remove from skillet with a slotted spoon and set aside on a plate lined with paper towels to absorb excess grease. Reserve 2 tablespoons of rendered bacon fat in skillet then discard remaining fat or save for another use. 3. Add garlic and onions to skillet with reserved bacon fat then sauté until fragrant and lightly golden browned around edges (about 4 minutes). 4. Add diced tomatoes and white wine then bring mixture to a boil before reducing heat to low and allowing flavors to meld together (about 5 minutes). 5. Add raw shrimp then cook until shrimp are pink (about 4 minutes). Stir in butter then season with salt and pepper as desired before stirring in chopped parsley. 6. Remove skillet from heat then stir in cooked grits until evenly combined throughout mixture (about 1 minute). Serve warm with extra butter if desired then enjoy!
