As a stay-at-home parent, finding the time to whip up a delicious and nutritious meal for your family can be challenging. Growing up in the South, I was lucky enough to enjoy plenty of shrimp and grits. There’s something about the creamy grits combined with the savory shrimp that has always kept me coming back for more. I like to think of this dish as comfort food at its finest!

My version of shrimp and grits is simple yet flavorful. I start by sautéing garlic and onion in some olive oil until they become fragrant. Then I add in some bacon, diced tomatoes, and white wine, allowing the flavors to meld together as they cook. Once the bacon is cooked through, I add in the shrimp and let them cook until they turn pink. Finally, I stir in a few tablespoons of butter along with some fresh herbs before adding the cooked grits to the pan. Ingredients:
• 4 slices bacon
• 2 cloves garlic
• 1 small onion
• 1 can diced tomatoes
• ½ cup white wine
• 1 lb raw shrimp
• 2 tablespoons butter
• 2 tablespoons chopped fresh parsley
• 2 cups cooked grits
Instructions:
1. Begin by preparing your grits according to package instructions. Set aside when finished cooking.
2. Heat a large skillet over medium heat then add bacon slices. Cook until bacon is crisp then remove from skillet with a slotted spoon and set aside on a plate lined with paper towels to absorb excess grease. Reserve 2 tablespoons of rendered bacon fat in skillet then discard remaining fat or save for another use.
3. Add garlic and onions to skillet with reserved bacon fat then sauté until fragrant and lightly golden browned around edges (about 4 minutes).
4. Add diced tomatoes and white wine then bring mixture to a boil before reducing heat to low and allowing flavors to meld together (about 5 minutes).
5. Add raw shrimp then cook until shrimp are pink (about 4 minutes). Stir in butter then season with salt and pepper as desired before stirring in chopped parsley.
6. Remove skillet from heat then stir in cooked grits until evenly combined throughout mixture (about 1 minute). Serve warm with extra butter if desired then enjoy!
