Beef and Sweet Potato Casserole – A Deliciously Hearty Meal For The Entire Family As a stay at home parent, I often find myself looking for new and creative recipes to make for my family. One of my favorite dishes that I love to make is a beef and sweet potato casserole. Not only does it taste delicious but it’s also a great way to use up ingredients I have on hand in the pantry. One of her favorite dishes was her beef and sweet potato casserole which she would always serve with her famous cornbread and collard greens. Preheat your oven to 375°F. Grease a 9x13-inch baking dish with cooking spray or butter. 2. In a large skillet over medium-high heat, add olive oil, then add onions and garlic; sauté until onions are translucent. Add ground beef and cook until no pink remains; drain fat if necessary. 3. Add Worcestershire sauce, paprika, thyme leaves and season with salt & pepper; stir until combined. 4. In your prepared baking dish layer sweet potatoes then top with ground beef mixture; pour chicken broth over top then sprinkle with brown sugar and pour melted butter over top of everything. 5. Cover your baking dish with foil then bake in preheated oven for 45 minutes; remove foil then bake an additional 15 minutes or until potatoes are tender when pierced with a fork. 6. Remove from oven and let cool slightly before serving; enjoy! This recipe is sure to please even the pickiest eaters! The combination of flavors from the Worcestershire sauce, paprika and thyme really bring out an amazing depth of flavor that goes so well with the sweetness of the potatoes and onions.
