Beef and Sweet Potato Casserole – A Deliciously Hearty Meal For The Entire Family
As a stay at home parent, I often find myself looking for new and creative recipes to make for my family. One of my favorite dishes that I love to make is a beef and sweet potato casserole. Not only does it taste delicious but it’s also a great way to use up ingredients I have on hand in the pantry.
This meal is so hearty and comforting, it’s a perfect dinner for those cold winter nights when you want something warm and satisfying to eat. It is also an easy dish that doesn’t require too much time in the kitchen. All you have to do is get the ingredients together, layer them in a baking dish, and pop it in the oven.
The story of this recipe comes from my childhood growing up in rural North Carolina. Every Sunday, my grandmother would make a big dinner for the family to enjoy after church. One of her favorite dishes was her beef and sweet potato casserole which she would always serve with her famous cornbread and collard greens.
I still remember the smell of the meal wafting through our house as we waited eagerly to get a plateful of deliciousness. The tender beef combined with the sweetness of the sweet potatoes was always such a treat! Even now, when I make this dish for my own family, I’m reminded of those Sunday dinners at my grandmother’s house.
Ingredients:
• 2 lbs lean ground beef
• 1 large sweet onion, diced
• 3 cloves garlic, minced
• 2 tablespoons olive oil
• 2 tablespoons Worcestershire sauce
• 2 teaspoons paprika
• 1 teaspoon dried thyme leaves
• 3 large sweet potatoes, peeled and cut into cubes
• 1 cup chicken broth
• 2 tablespoons butter, melted
• 2 tablespoons brown sugar
• Salt & pepper to taste
Instructions:
1. Preheat your oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or butter.
2. In a large skillet over medium-high heat, add olive oil, then add onions and garlic; sauté until onions are translucent. Add ground beef and cook until no pink remains; drain fat if necessary.
3. Add Worcestershire sauce, paprika, thyme leaves and season with salt & pepper; stir until combined.
4. In your prepared baking dish layer sweet potatoes then top with ground beef mixture; pour chicken broth over top then sprinkle with brown sugar and pour melted butter over top of everything.
5. Cover your baking dish with foil then bake in preheated oven for 45 minutes; remove foil then bake an additional 15 minutes or until potatoes are tender when pierced with a fork.
6. Remove from oven and let cool slightly before serving; enjoy!
