    The Story Behind Fried Wontons

Fried wontons have been around for centuries and have been enjoyed in many cultures around the world. For me personally, though, I remember my mom making them when I was growing up as a stay at home parent – she would make them every Sunday afternoon as a special treat for us kids! It was always so much fun to help her prepare them – we would each get to choose what filling we wanted inside our wontons and then help her fold them and fry them up! Now that I’m an adult and stay at home parent myself, I’m so happy to be able to share this tradition with my own children! Fried wontons bring back so many fond memories and it’s always such a joy to watch my kids get excited about making them with me!

Beef and Black Bean Stir-Fry: A Delicious, Hearty Meal for Stay-at-Home Parents

As stay-at-home parents, we are always looking for quick and tasty meals that will feed our family and fit into our busy schedules. That’s why I love this beef and black bean stir-fry recipe. It comes together quickly, is packed with flavor, and is a hearty meal that everyone in the family will love. Plus, it’s easy to customize with whatever veggies you have on hand.

I’ve been making this dish for years, ever since I was a child. My parents used to make it for us all the time – it was a favorite in our house. My mom would always tell me the story of how she came up with the recipe when she moved to America from China as a young adult. She was working full time and didn’t have much money or access to many ingredients. So she started making stir fries with whatever she had on hand – usually beef, beans, and whatever veggies were in season. She would season it with soy sauce and garlic, and the result was always delicious. I still make it today and it always reminds me of her.

Now let’s get down to business – here’s what you need to make this delicious beef and black bean stir-fry:

    Ingredients:
    • 1 pound of lean ground beef
    • 1 can of black beans (15 ounces), drained
    • 1 red bell pepper, diced
    • 1 green bell pepper, diced
    • 1 onion, diced
    • 2 cloves of garlic, minced
    • 2 tablespoons of soy sauce
    • 2 tablespoons of sesame oil
    • Salt and pepper to taste
    • Optional: 2 cups of cooked white or brown rice (for serving)

    Instructions:
    1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and cooked through, about 8 minutes. Break up any large pieces with a wooden spoon or spatula as it cooks.
    2. Add the diced bell peppers, onion, garlic, soy sauce, sesame oil and salt and pepper to taste. Cook for an additional 5 minutes or until vegetables are softened.
    3. Add the black beans and cook for an additional minute or two until heated through. Serve over cooked rice if desired. Enjoy!

This dish is so easy to make – you can have dinner on the table in less than 20 minutes! Plus, it’s healthy – packed with protein from the beef and fiber from the black beans – so you can feel good about serving it to your family. Any leftovers make a great addition to lunch boxes or as part of another meal later in the week.

I hope this recipe brings you as much joy as it brings me! Give it a try – your family will thank you!

The first time I made this dish was when my daughter was about a year old. She was already a great eater and loved trying different flavors, so I thought this would be a great way to introduce her to a variety of vegetables. As soon as she tried the stir-fry, she was hooked. She even asked for seconds!

I love making this stir-fry because it’s so versatile. You can use any combination of vegetables you have in your kitchen – bell peppers, carrots, mushrooms, bok choy – whatever you have on hand. And if you’re short on time, you can always use pre-cut vegetables from the store.

To make the stir-fry, start by prepping all of your ingredients. Slice the mushrooms and bell peppers into thin strips and mince the garlic and ginger. Then set aside the beef strips and mix together the sauce ingredients in a small bowl (soy sauce, honey, sesame oil, rice wine vinegar).

Heat some oil in a large skillet over medium heat and add the beef strips. Cook until lightly browned on both sides (about 3 minutes). Add the mushrooms and bell peppers and cook for an additional 2 minutes. Then add the garlic, ginger and sauce mixture to the pan. Cook for an additional 1 minute until everything is heated through and serve over cooked white or brown rice.
