As a stay-at-home parent, time is often scarce and there’s not always enough time to prepare a meal from scratch. This hearty Beef and Mushroom Soup is the perfect solution – it’s easy to make, nutritious, and delicious. Plus, it’s a great way to get your family together around the dinner table.
Ingredients
2 tablespoons of olive oil
1 onion, diced
2 cloves of garlic, minced
1 pound of ground beef
2 tablespoons of tomato paste
1 teaspoon of dried oregano
2 cups of beef broth
1 teaspoon of Worcestershire sauce
Salt and pepper to taste
8 ounces of mushrooms, chopped
3 potatoes, peeled and diced
2 carrots, peeled and diced
1 cup of frozen peas
Chopped fresh parsley for garnish (optional)Instructions
1. Heat the olive oil in a large soup pot over medium heat. Add the onion and sauté for 3 minutes until softened. Stir in the garlic and cook for another minute.
2. Add the ground beef and cook until no longer pink, breaking it up with a wooden spoon as you go. Stir in the tomato paste and oregano and cook for another minute.
3. Pour in the beef broth, Worcestershire sauce, salt and pepper. Bring to a boil then reduce heat to low and simmer for 10 minutes.
4. Add the mushrooms, potatoes, carrots, and frozen peas to the pot. Simmer for another 15 minutes or until vegetables are tender.
5. Taste test for seasonings before serving and adjust if necessary. Garnish with fresh parsley before serving if desired.

Ingredients
• 2 cups cooked shrimp, peeled and deveined
• 4 tablespoons butter, melted
• 2 tablespoons mayonnaise
• 2 teaspoons Dijon mustard
• 2 teaspoons Worcestershire sauce
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon paprika
• 1/4 teaspoon cayenne pepper
• 4 hoagie rolls or sub rolls, split in half lengthwise
• 4 slices provolone cheese (optional)
• 4 lettuce leaves
• 8 slices pickled jalapenos (optional)
• 8 slices tomato
Instructions1. Preheat the oven to 350 degrees Fahrenheit.
2. In a medium bowl, mix together the butter, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, paprika and cayenne pepper until well combined. Add the cooked shrimp and stir until the shrimp is coated with the sauce.
3. Place the hoagie rolls on a baking sheet and spread 1 tablespoon of the sauce from the bowl on each roll half. Top each roll half with a slice of provolone cheese (optional). Bake for 5-7 minutes or until the cheese is melted and golden brown.
4. Divide the shrimp mixture evenly among the four rolls and top with lettuce, pickled jalapenos (optional) and tomatoes. Serve immediately. Enjoy!

Fold up sides of dough to cover meat completely then brush top with egg wash mixture before baking for 25 minutes or until golden brown.
