Ingredients: 4 large potatoes, 2 tablespoons butter, 1 tablespoon olive oil, ½ cup sour cream, 2 tablespoons chopped fresh chives, Salt and pepper to taste. Instructions: 1. Preheat the oven to 350 degrees Fahrenheit. 2. Wash the potatoes and pat them dry with a paper towel. 3. Place the potatoes on a baking sheet and rub them with butter and olive oil. 4. Bake in the preheated oven for about 45 minutes or until golden brown and tender when pierced with a fork. 5. Remove from the oven and let cool for 5 minutes before slicing in half lengthwise. 6. Scoop out some of the potato flesh from each half and place in a bowl. Mash lightly with a fork and mix in ½ cup of sour cream, 2 tablespoons of chopped fresh chives, salt, and pepper to taste. 7.
