Udon with Broth and Toppings Udon is one of the most beloved Japanese noodles. It is a thick and chewy noodle made from wheat flour. For many, this is a comfort food, and I love making it for my family. I’ve had a lot of practice over the years as a stay-at-home parent. I’ve always enjoyed the process of cooking, and creating meals for my family brings me joy. Today I’m going to share with you a recipe for Udon with broth and toppings. It’s an easy yet delicious meal that you can make at home with minimal ingredients. This recipe serves four people and can be easily adapted to your own tastes. Ingredients: - 8 ounces udon noodles - 6 cups chicken or vegetable broth - 2 tablespoons soy sauce - 1 tablespoon sesame oil - 1 teaspoon ginger, grated - 2 cloves garlic, minced - 2 green onions, sliced - 1 cup mushrooms, sliced - 4 eggs, hard boiled - Toppings (optional): seaweed, sesame seeds, chili flakes, furikake Instructions: 1. Bring a large pot of water to a boil over medium heat. Once boiling, add in the udon noodles and cook according to package instructions. Drain the noodles and set aside. 2. In a separate pot over medium heat, add in the broth, soy sauce, sesame oil, ginger, garlic, and green onions. Bring to a simmer and cook for 5 minutes or until fragrant. 3. Add in the mushrooms and cook for an additional minute or two until softened. Taste the broth and adjust seasonings as desired. 4. Divide the cooked udon noodles among four bowls and ladle the hot broth over each bowl of noodles. You can also add some of the cooked mushrooms if desired. 5. Top each bowl with a hard boiled egg (sliced or halved) and any desired toppings such as seaweed, sesame seeds, chili flakes or furikake seasoning mix. Enjoy! I remember when I first tried Udon with broth and toppings while visiting Japan many years ago; it was so good that I still make it at home today! The combination of flavors is so satisfyingly delicious—the salty broth paired with the chewy noodles is a match made in heaven. Every time I make this dish for my family we all enjoy it immensely; it’s also an easy way to get everyone around the table sharing stories about our day while we enjoy good food together!
