My family’s love affair with French onion soup began several years ago when I was looking for something to cook on a cold winter night. I had heard about this classic dish, but had never made it before. After a quick online search, I found the perfect recipe and set about gathering the ingredients. To make this delicious soup, you’ll need: 4 large onions, 2 tablespoons of butter, 2 tablespoons of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of black pepper, 6 cups of beef broth and 1/2 cup of white wine. First, you’ll need to slice the onions into thin strips and then sauté them in butter until they are golden brown. Once the onions are cooked, add the flour and mix together until all the ingredients combine into a paste. Next add the sugar, salt, pepper and beef broth to the mix and bring to a boil. Once boiling reduce the heat to low and simmer for at least 30 minutes or until the flavors have blended together nicely. Now comes my favorite part – adding the white wine! This gives the soup an amazing depth of flavor that you just can’t get any other way. After adding the wine, let it simmer for another 10 minutes or so until everything is cooked through and then ladle it into your favorite soup bowls. Finally top with some freshly grated Parmesan cheese and freshly chopped parsley for a delicious finishing touch! This French onion soup is always a hit with my family – even my picky kids love it! Every time we eat it we tell stories about how I found the recipe online and how much fun we had making it together. It’s amazing how something as simple as a bowl of soup can bring us so much joy!
