Beef Goulash – A Hearty and Comforting Meal for Busy Parents As a stay-at-home parent, I understand the struggle of trying to make a delicious meal that’s quick, easy and affordable. This beef goulash recipe is one of my favorite dishes to prepare for my family. Not only is it hearty, comforting and full of flavor, but it can be prepared in less than an hour. Plus, it’s budget friendly. Ingredients: • 2 tablespoons of olive oil • 2 pounds ground beef • 1 large onion, diced • 6 cloves garlic, minced • 2 tablespoons Hungarian sweet paprika • 1 teaspoon ground cumin • 1 teaspoon dried oregano • 1 teaspoon salt • 1/4 teaspoon black pepper • 2 cups beef stock • 2 tablespoons tomato paste • 2 tablespoons Worcestershire sauce • 3 large potatoes, peeled and cubed • 2 large carrots, peeled and diced • 1 cup frozen green beans or peas • Chopped fresh parsley for garnish (optional) Directions: 1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until no longer pink. Drain off any excess fat. Remove the beef from the pan and set aside. 2. Add the onion to the pan and cook until softened, about 5 minutes. Add the garlic, paprika, cumin, oregano, salt and pepper. Cook for another minute until fragrant. 3. Return the beef to the pan along with the beef stock, tomato paste and Worcestershire sauce. Bring to a simmer then reduce heat to low and cover with a lid. Simmer for 20 minutes stirring occasionally. 4. Add the potatoes and carrots to the pan along with an additional cup of beef stock if needed. Increase heat to medium-high and bring to a simmer again then reduce heat to low, cover with a lid and simmer for 15 minutes until potatoes are tender. 5. Stir in the frozen green beans or peas and cook for an additional 5 minutes until heated through. 6. Serve warm garnished with chopped fresh parsley if desired. Enjoy!
