Beef Curry – A Tasty, Home-Cooked Meal Beef curry is a classic dish that is always sure to please. It’s an easy dish to make and can be cooked in a variety of ways. When I was young, my mother used to make beef curry for us on special occasions. It was one of my favorite meals and I would always look forward to it with great anticipation. It was such a treat for my family and I when we were able to come together and enjoy this tasty dish! Ingredients: -2 lbs flank steak, cut into cubes -1 large onion, diced -3 cloves garlic, minced -2 tablespoons curry powder -1 teaspoon ground cumin -1 teaspoon ground coriander -1 teaspoon ground turmeric -1 (14 ounce) can diced tomatoes -1/4 cup tomato paste -2 cups beef broth -1/4 cup coconut milk (optional) -Salt and pepper to taste -Fresh cilantro for garnish (optional) Instructions: 1. Heat a large skillet over medium heat. Add the steak cubes and cook until browned on all sides, about 5 minutes. Remove from heat and set aside. 2. In the same skillet, add the onion and garlic and cook until softened, about 5 minutes. Add the curry powder, cumin, coriander, and turmeric and cook for 1 minute more. 3. Add the diced tomatoes, tomato paste, beef broth, and coconut milk (if using). Bring the mixture to a boil then reduce to a simmer. Simmer for 20 minutes until the sauce has thickened slightly. 4. Add the cooked steak cubes back into the skillet and simmer for another 10 minutes until heated through. Season with salt and pepper if desired. Serve over rice or naan with fresh cilantro as garnish if desired. Enjoy!
