Pork Chops with Apricot Glaze: A Stay-at-Home Parent’s Quick and Easy Meal As a stay-at-home parent, I know how hard it can be to find the time to cook something special for dinner. That’s why I love this delicious pork chop recipe with an apricot glaze. Not only is it so easy to prepare and cook, but it also looks great on the plate and tastes amazing. Plus, it’s a great way to use up any leftovers in the fridge. The ingredients for this recipe are simple and easily found in most kitchens. You will need 4 thick cut pork chops, 1 can of apricot preserves, 2 cloves of garlic (minced), 1 tablespoon of olive oil, 1 teaspoon of salt, 1/2 teaspoon of pepper, and 2 tablespoons of balsamic vinegar. For the glaze, you will need 1/4 cup of apricot preserves, 2 tablespoons of butter (melted), 1 tablespoon of honey, and 2 teaspoons of mustard. To start this recipe off right, preheat the oven to 375°F and line a baking sheet with parchment paper or aluminum foil. Next, heat the olive oil in a skillet over medium-high heat. Season the pork chops with salt and pepper on both sides. Once the skillet is hot, add the pork chops and cook until they’re golden brown on each side (about 4 minutes per side). Remove from heat and transfer to the prepared baking sheet. Next, in a small bowl combine all ingredients for the apricot glaze: apricot preserves, butter, honey, and mustard. Whisk until smooth and pour over the pork chops on the baking sheet. Bake for 15 minutes or until fully cooked through (internal temperature should reach 145°F). Once done cooking let pork chops rest for 5 minutes before serving. This pork dish is best served with some steamed vegetables or roasted potatoes for a complete meal. And don’t forget a nice glass of white wine to top it off! For me, this pork chop recipe was a lifesaver during my days as a stay-at-home parent. Not only was it quick and easy to prepare but it also tasted amazing! It allowed me to serve up something special yet still have plenty of time to spend with my kids afterwards. Plus, I got to use up some leftovers in my fridge which always made me feel good too!
