Cook Up Some Fun With Chicken Fajitas: A Parent's Guide to Making Delicious Meals at Home
Chicken Fajitas Ingredients: •4 boneless, skinless chicken breasts, cut into thin strips •2 tablespoons olive oil •1 large red onion, thinly sliced •1 bell pepper, seeded and cut into thin strips •1 tablespoon chili powder •2 teaspoons ground cumin •1 teaspoon garlic powder •Salt and pepper to taste •8 flour tortillas, warmed •Toppings such as salsa, sour cream, guacamole and shredded cheese (optional) As a stay-at-home parent, I know that cooking dinner can be a challenge. That’s why I love to make chicken fajitas - they’re easy to prepare and full of flavor. In just 20 minutes, I can have a delicious meal on the table that my whole family loves. Plus the leftovers make for great lunch the next day. Here’s how I make my delicious chicken fajitas. First, I season the chicken strips with chili powder, cumin, garlic powder, salt and pepper. Then I heat two tablespoons of olive oil in a large skillet over medium heat and cook the chicken strips until they’re cooked through. While the chicken is cooking, I slice my bell pepper and red onion into thin strips. When the chicken is done cooking, I remove it from the skillet and set it aside. Then I add the peppers and onions to the skillet and cook them until they’re tender. Once the vegetables are cooked through, I add the cooked chicken back to the skillet and stir everything together. The fajitas are now ready to serve. I like to serve my chicken fajitas with warm flour tortillas so that my family can make their own tacos. We also like to top our tacos with salsa, sour cream, guacamole and shredded cheese - but these toppings are optional. My kids especially love when we make this meal because they get to customize their tacos however they want! The best part is that there are often leftovers which makes for a great lunch the next day. The story behind my favorite chicken fajita recipe is that it was passed down from my grandmother to my mother and then to me. My grandmother used to make this meal all the time when I was growing up - she called them Mexican tacos! She taught me how to season the chicken strips so they had just enough flavor while still allowing the vegetables to shine through. Now every time I make this dish it reminds me of her and our family dinners together when I was young - it’s definitely one of our favorite meals! Making these chicken fajitas is always a special occasion in our house - not only is it quick and easy but it tastes delicious too!
