Cooking Up Comfort: How to Make Beef and Vegetable Soup As a Busy Stay-At-Home Parent!
Beef and Vegetable Soup – A Hearty, Tasty Meal for the Whole Family As a stay-at-home parent, I’m always looking for healthy meals that are easy to prepare and that the whole family will enjoy. One of our favorites is beef and vegetable soup. This hearty soup is packed with flavor and nutrition, and it’s a breeze to make. Best of all, it’s a great way to get everyone in the family eating their vegetables! I have fond memories of my grandmother making beef and vegetable soup for us on cold winter days. It was always a treat when she served it with homemade bread or biscuits. I used to love watching her cook, as she would take her time adding each ingredient with love and care. Now that I’m a parent myself, I enjoy making this soup for my own family. The ingredients are simple: beef stock, diced beef chuck, carrots, celery, potatoes, onions, garlic, bay leaves, oregano, thyme and any other vegetables you like. I usually add green beans or peas for an extra boost of color and nutrition. To make the soup, I begin by sautéing the diced beef chuck in a large pot until it is lightly browned. Next I add the vegetables (except for the green beans or peas), along with the stock and some water. After bringing the mixture to a boil, I reduce the heat to low and let it simmer for an hour or so until the vegetables are tender. At this point I add the green beans or peas and let everything cook together for another 15 minutes before serving. The finished product is a delicious soup that’s both hearty and nutritious – perfect for chilly days or just when you need a comforting meal. In addition to being tasty and easy to prepare, this beef and vegetable soup has an added bonus: leftovers can be frozen and enjoyed later on busy days when there’s no time to cook! So next time you’re looking for a healthy meal that your whole family will enjoy, give this recipe a try – you won’t be disappointed! Ingredients List: 1 pound diced beef chuck 4 cups beef stock 2 carrots, chopped 2 celery stalks, chopped 2 potatoes, cubed 1 onion, diced 3 cloves garlic, minced 2 bay leaves 1 teaspoon oregano 1 teaspoon thyme 1 cup green beans (optional) 1 cup peas (optional)
