This hearty Beef and Mushroom Soup is the perfect solution – it’s easy to make, nutritious, and delicious. Plus, it’s a great way to get your family together around the dinner table. Ingredients 2 tablespoons of olive oil 1 onion, diced 2 cloves of garlic, minced 1 pound of ground beef 2 tablespoons of tomato paste 1 teaspoon of dried oregano 2 cups of beef broth 1 teaspoon of Worcestershire sauce Salt and pepper to taste 8 ounces of mushrooms, chopped 3 potatoes, peeled and diced 2 carrots, peeled and diced 1 cup of frozen peas Chopped fresh parsley for garnish (optional) Instructions 1. Heat the olive oil in a large soup pot over medium heat. Add the onion and sauté for 3 minutes until softened. Stir in the garlic and cook for another minute. 2. Add the ground beef and cook until no longer pink, breaking it up with a wooden spoon as you go. Stir in the tomato paste and oregano and cook for another minute. 3.
