Ingredients: • 2 pounds beef chuck roast, cut into 1-inch cubes • 2 tablespoons olive oil • 1 large onion, chopped • 4 cloves garlic, minced • 1 cup dry red wine • 3 cups beef broth • 3 tablespoons Worcestershire sauce • 2 tablespoons tomato paste • 2 bay leaves • 1 teaspoon dried thyme • 4 large carrots, cut into 1-inch pieces • 4 stalks celery, cut into 1-inch pieces • 8 ounces mushrooms, sliced • ¼ cup all-purpose flour • Salt and pepper to taste Instructions: 1. Heat the oil in a large skillet over medium heat. Add the beef cubes and cook until browned on all sides. Transfer the beef cubes to a slow cooker. 2. Add the onion and garlic to the skillet and cook until softened, about 3 minutes. Pour in the wine and scrape any browned bits from the bottom of the skillet with a wooden spoon. Pour this mixture over the beef cubes in the slow cooker. 3. Add the beef broth, Worcestershire sauce, tomato paste, bay leaves, and thyme to the slow cooker and stir to combine. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours. 4. Add carrots, celery, and mushrooms to the slow cooker during the last hour of cooking time. In a small bowl whisk together flour with 1/2 cup cold water until smooth then stir into slow cooker mixture until thickened. Season with salt and pepper as desired before serving warm over egg noodles or mashed potatoes.
