Ingredients: • 2 pounds stewing beef, cut into 1-inch cubes • 2 tablespoons olive oil • 2 cloves garlic, minced • 1 onion, diced • 2 carrots, diced • 2 celery stalks, diced • 2 tablespoons tomato paste • 1/2 cup dry white wine • 3 cups beef broth • 1 bay leaf • 1 teaspoon dried oregano • 1 teaspoon dried thyme • 1 teaspoon dried rosemary • Salt and pepper to taste • 2 tablespoons fresh parsley, chopped (optional) Instructions: 1. Preheat oven to 350°F. Heat the olive oil in a large pot over medium-high heat. Add the garlic and onion and cook until softened, about 5 minutes. Add the carrots and celery and cook for an additional 5 minutes. 2. Add the tomato paste and stir until it is completely combined with the vegetables. Pour in the white wine and simmer for 3 minutes to let the alcohol cook off. Add the beef cubes and cook until browned on all sides, about 8 minutes total. Pour in the beef broth and add the bay leaf, oregano, thyme, rosemary, salt, and pepper. Bring to a boil then reduce heat to low. Cover pot with lid and transfer to preheated oven. Bake for 1 hour 30 minutes or until beef is fork tender. 3. When ready to serve, garnish with fresh parsley if desired and enjoy! As a stay at home parent I understand just how busy life can get!
