Ingredients: 1 package (16 ounces) frozen cooked shrimp, thawed & drained 1 can (15 ounces) sliced yellow squash, drained 1 can (10 ounces) cream of celery soup 1/2 cup mayonnaise 1/2 teaspoon garlic powder 1/4 teaspoon pepper 1/4 cup dry bread crumbs 2 tablespoons butter, melted 1/4 cup grated Parmesan cheese Directions: Preheat oven to 350°F. Grease an 8-inch square baking dish with cooking spray. In a large bowl, combine shrimp, squash, soup, mayonnaise, garlic powder and pepper; mix well. Spoon into prepared baking dish. In a small bowl, combine bread crumbs, butter and Parmesan cheese; mix well and sprinkle over shrimp mixture in baking dish. Bake 30 minutes or until bubbly and golden brown on top. Let stand 10 minutes before serving. This casserole is great for those nights when time is limited but you still want to serve your family something nutritious and flavorful. The combination of shrimp and squash gives this dish plenty of protein and vitamins while the creamy soup adds richness to the flavor.
