"Easy Veggie & Tofu Stir-Fry - A Delicious Stay-at-Home Meal for Busy Parents!"
Vegetable and Tofu Stir-Fry with Spicy Peanut Sauce As a stay-at-home parent, I know the importance of being able to make delicious meals for my family quickly and easily. This stir fry is one of my go-to recipes for busy nights when time is short. Packed with vegetables and tofu, it’s a nutrient-dense dish that the whole family can enjoy. The spicy peanut sauce gives it an extra punch of flavor that will have you coming back for seconds. Ingredients: - 1 tablespoon sesame oil - 3 cloves garlic, minced - 1 red bell pepper, diced - 1 carrot, sliced - 1 zucchini, sliced - 1 (8 ounce) package extra firm tofu, drained and cubed - 2 tablespoons soy sauce For the spicy peanut sauce: - ¼ cup peanut butter - 2 tablespoons soy sauce - 2 tablespoons rice vinegar - 1 tablespoon honey - 2 teaspoons chili garlic paste (or sriracha) - ½ teaspoon ground ginger Instructions: 1. Heat the sesame oil in a large skillet or wok over medium heat. Add the garlic, bell pepper, carrot and zucchini. Cook for 5 minutes or until vegetables are just softened. 2. Add the tofu cubes to the pan and cook for an additional 5 minutes until evenly browned all over. Add the soy sauce to the pan and stir to combine. Cook for 1 minute more before removing from heat. 3. To make the spicy peanut sauce, whisk together all of the ingredients in a small bowl until smooth and creamy. If desired, add a splash of water to thin out the sauce as desired. 4. Serve the stir fry topped with a generous drizzle of the spicy peanut sauce and enjoy! My family has been making this stir fry recipe for years now and it never gets old! It’s a great way to get lots of veggies into our diets in an easy way that everyone loves – even our picky eaters! Plus, if you have leftovers they freeze really well so you can save them for another busy night down the road. This stir fry is definitely one recipe I’ll be passing down to my kids when they get older!
