Fried Rice with Vegetable Stir-Fry and Eggs: A Delicious Home-Cooked Meal for the Stay-at-Home Parent As a stay-at-home parent, finding the time and energy to craft a delicious and nutritious home-cooked meal can be a challenge. Ingredients: • 1 tablespoon vegetable oil • 2 cloves garlic, minced • 1 teaspoon fresh ginger, grated • ½ cup onion, diced • 1 cup cooked rice • 2 cups mixed vegetables (I like to use carrots, broccoli, bell peppers, and mushrooms) • 2 eggs • 2 tablespoons soy sauce • Salt and pepper to taste Instructions: 1. Heat the oil in a large skillet over medium heat. Add the garlic, ginger, and onion, and sauté for about 3 minutes until the vegetables are tender. 2. Add the cooked rice and vegetables to the skillet and cook for another 5 minutes until everything is heated through. 3. Push the vegetables and rice aside, making a small well in the pan. Crack the eggs into the well, season with salt and pepper, and scramble them until cooked through. 4. Once the eggs are cooked, mix them together with the vegetables and rice. 5. Finally, add soy sauce to taste and cook for another minute or two until everything is combined and heated through. 6. Serve hot with your favorite sides! My family loves this dish so much that I make it every week! Not only is it quick and easy to make but it’s also healthy as well. The combination of protein from the eggs with all of those delicious vegetables makes for a balanced meal that everyone can enjoy. And since there are so many options for mixing up ingredients in a stir fry dish like this one, you can customize it to fit whatever ingredients you have in your kitchen at any given time! I first discovered this recipe when I was looking for a way to use up some leftovers in my fridge one night years ago. Since then I have tweaked it here and there to make it my own – swapping out different types of vegetables or adding extra spices depending on what’s in season or what I happen to have on hand at the time!
