Grilled Pork Chops with Fruit Salsa As a stay at home parent, I love to find easy and delicious recipes to feed my family. One of our favorite weeknight dinners is Grilled Pork Chops with Fruit Salsa. This recipe comes together quickly and is full of flavor that everyone in the family can enjoy! To make this dish, you’ll need the following ingredients: -4 pork chops -1/4 cup olive oil -2 tablespoons balsamic vinegar -2 tablespoons honey -1 teaspoon garlic powder -1 teaspoon onion powder -1/2 teaspoon dried oregano -Salt and pepper to taste -1 cup diced pineapple -1/2 cup diced mango -1/4 cup diced red onion -2 tablespoons chopped cilantro -1 tablespoon jalapeno, minced (optional) -2 tablespoons lime juice To begin, combine the olive oil, balsamic vinegar, honey, garlic and onion powders, oregano, and salt and pepper in a small bowl to make a marinade for the pork chops. Place the pork chops into a shallow baking dish or Ziploc bag and pour the marinade over them. Cover and let marinate for 30 minutes in the refrigerator. While the pork chops are marinating, prepare the salsa. In a medium bowl, combine the diced pineapple, mango, red onion, cilantro, jalapeno (if desired), and lime juice. Stir until combined and set aside until ready to serve. When you’re ready to cook the pork chops, preheat your grill to medium heat. Grill the pork chops for 4 minutes per side or until they reach an internal temperature of 145 degrees Fahrenheit. Serve the pork chops with a generous helping of fruit salsa on top. The sweetness of the pineapple and mango pairs perfectly with the savory pork chops for an easy yet delicious meal! I remember when my kids were small toddlers how much they loved this meal!
