One of my favorite weeknight meals to prepare is grilled skirt steak with chimichurri sauce. It’s an easy dish to make and it’s always a hit with my family. The star of this dish is the skirt steak. The skirt steak is a thin cut of meat from the plate section of the cow, so it cooks quickly and is full of flavor. To prepare the steak, I season it generously with salt and pepper, then let it come to room temperature before grilling. I prefer to cook the steak over medium-high heat for about 5 minutes per side, until it’s cooked to your desired doneness. An essential part of the meal is the homemade chimichurri sauce. This bright and herby sauce is made by combining fresh parsley, cilantro, garlic, olive oil, red wine vinegar, and lemon juice in a food processor or blender. I like to blend all of the ingredients together until they’re completely combined into a smooth sauce. The chimichurri sauce can be served as-is or thinned out with a bit more olive oil and lemon juice if desired. Once the steak is cooked and the chimichurri sauce is prepared, I like to serve the meal over a bed of arugula or spinach for added nutrition and texture. The grilled steak pairs perfectly with the herby chimichurri sauce and makes for an easy but delicious weeknight meal that everyone in my family loves. I’ll never forget the first time I made this dish for my family. It was about 8 years ago when my oldest daughter was just a toddler and I was trying to find ways to make healthy meals without spending too much time in the kitchen. Season both sides of the steak generously with salt and pepper and let come to room temperature before grilling. 2. Heat your grill over medium high heat and cook steak for 5 minutes per side (or until cooked to desired doneness). Let rest for 5 minutes before slicing against the grain into thin strips. 3. To make the chimichurri sauce, combine parsley, cilantro, garlic, olive oil, red wine vinegar, and lemon juice in a food processor or blender and blend until smooth. You can thin out with more olive oil or lemon juice if desired. 4. Serve steaks over arugula or spinach and top with chimichurri sauce before serving. Enjoy!
