Grilled Steak with Chimichurri Sauce As a stay at home parent, I know how important it is to have quick, tasty meals that you can whip up in no time. Grilled steak with chimichurri sauce is one of my favourites for when I’m short on time but don’t want to compromise on flavour. Not only does it require minimal ingredients, but it also comes together in just under half an hour. Plus, the leftovers make for an excellent sandwich the next day! This recipe is inspired by one of my fondest childhood memories. Growing up, my father was the king of the grill. Every Saturday we would gather around the barbeque and wait as he cooked us up some delicious steaks. He would always top them with a generous helping of his homemade chimichurri sauce. The mix of herbs and garlic was always the perfect compliment to the tender steak and smoky char from the grill. To this day, I still find myself missing his cooking every time I make this dish. Now that I am a stay at home parent, I’ve taken it upon myself to recreate those flavours in a way that can be done quickly and easily on a weeknight. Grilled steak with chimichurri sauce has become a staple in our house because it’s both delicious and requires minimal effort. Ingredients: - 2 pounds flank steak or skirt steak - ¼ cup olive oil - 1 teaspoon salt - 1 teaspoon black pepper - For the Chimichurri Sauce: - ½ cup olive oil - ½ cup fresh parsley leaves, finely chopped - 2 cloves garlic, minced - 2 tablespoons fresh oregano leaves, finely chopped - 2 tablespoons red wine vinegar - 1 teaspoon salt - 1 teaspoon black pepper Instructions: 1. Preheat your grill to medium high heat and clean the grates with a wire brush. 2. Rub your steaks with olive oil and season generously with salt and pepper on both sides. 3. Place your steaks on the preheated grill and cook for 3 minutes per side or until they reach your desired level of doneness (rare, medium rare or medium). 4. Transfer your steaks to a plate and let them rest for 5 minutes before slicing against the grain into thin strips. 5. To make the chimichurri sauce: In a small bowl, combine all of the ingredients together until well combined. Taste for seasoning and adjust accordingly if needed. 6. Serve your sliced steak alongside your chimichurri sauce and enjoy! This recipe is perfect for busy weeknights when you need something that’s both delicious and easy to make.
