Beef and Ginger Soup: An Engaging Recipe for Stay at Home Parents As stay at home parents, sometimes it can feel like we are stuck in a rut. We make the same meals over and over again, and the same snacks and desserts. Today, I want to share with you my favorite recipe: Beef and Ginger Soup. Not only is this recipe delicious, but it is also a great way to break out of our comfort zone and try something new. This hearty soup is sure to please both adults and children alike. It is a great way to introduce kids to new flavors and textures. The beef is marinated overnight for extra flavor, and the ginger gives the soup a nice kick. The ingredients list is below, but feel free to customize it according to your own tastes. Ingredients: -2 pounds of stew beef (marinade overnight) 2 tablespoons of olive oil 1 teaspoon of ground ginger 3 cloves of garlic, minced 1 onion, diced 4 carrots, peeled and diced 4 celery stalks, diced 2 tablespoons of tomato paste 4 cups of beef stock (or vegetable stock if desired) 2 bay leaves 1 cup of frozen peas Salt & pepper to taste Instructions: 1. Begin by marinating the stew beef overnight in a mixture of olive oil, salt, pepper, garlic powder, onion powder, paprika and chili powder. 2. Heat the olive oil in a large pot over medium heat. Once hot add the beef and cook until browned on all sides. Remove from the pot with a slotted spoon and set aside. 3. To the same pot add the onion, carrots and celery and cook until softened. Add in the garlic and ginger then stir until fragrant (about 1 minute). 4. Add in the tomato paste then stir until combined with the vegetables. Pour in the beef stock then add in bay leaves and bring to a boil before reducing heat to low and simmering for about 10 minutes or until vegetables are tender. 5. Add in the marinated beef (and any juices from marinating) then stir until combined with soup mixture before adding in frozen peas and simmering for another 5 minutes or until peas are heated through. 6. Taste soup then season with salt & pepper as desired before serving with your favorite crusty bread or crackers! Enjoy! So there you have it! My favorite recipe for beef & ginger soup! I have been making this dish for years now as a stay at home parent; it's an easy meal that everyone loves! Plus, it's also a great way to introduce kids to new flavors. Whether you make it for dinner tonight or save it for leftovers tomorrow – I hope you enjoy this simple yet delicious dish! But why Beef & Ginger Soup? Well, as any parent knows – stories help connect us to our food! My story behind this dish goes back several years ago when my family took a trip to China. While there we visited many different markets where we tried all types of food – including Beef & Ginger Soup! It was unlike any soup I had ever tasted before; so flavorful yet so light! Since that trip I have been making this dish at home ever since – each time bringing back memories of China!
