Ratatouille: A Stay at Home Parent’s Dream Recipe As a stay at home parent, I know the challenges of cooking with limited time and energy. That’s why I love Ratatouille. Quick to prepare, easy to clean up, and delicious to eat - it’s the perfect meal for busy parents. But Ratatouille isn’t just a convenient dish - it’s also packed with flavor. The classic French recipe combines fresh vegetables, herbs, and olive oil to create a hearty meal that pleases everyone’s taste buds. The best part is that Ratatouille can be made in advance and stored in the refrigerator for up to three days. That means you can make a big batch on Sunday and have enough leftovers to feed your family for the rest of the week. Perfect! Ingredients: 2 tablespoons of olive oil 1 medium onion, diced 1 large red bell pepper, diced 2 cloves of garlic, minced 2 large zucchini, sliced 2 large yellow squash, sliced 1 large eggplant, diced 1 (14.5 ounce) can of diced tomatoes 1 teaspoon of dried oregano 1 teaspoon of dried basil Salt and pepper to taste 1/4 cup of grated Parmesan cheese (optional) Instructions: 1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. 2. Add the garlic, zucchini, yellow squash, and eggplant and cook until softened, about 10 minutes. 3. Add the diced tomatoes, oregano, basil, salt and pepper to taste. Simmer for 10 minutes or until vegetables are tender. 4. Preheat oven to 350°F (175°C). Transfer the ratatouille mixture to an oven-safe baking dish and top with Parmesan cheese if desired. Bake for 20 minutes or until golden brown on top. Enjoy! As I was prepping this dish recently I couldn’t help but be reminded of one of my favorite movies - Ratatouille! In the movie Remy is an ambitious rat who dreams of being a chef despite encountering many obstacles along the way. His determination eventually pays off as he succeeds in creating a delicious Ratatouille dish that wows his customers! Watching Remy’s journey made me appreciate all the hard work that goes into each dish I prepare - even if it’s just my own version of Ratatouille! I hope others will be inspired by this story too as they enjoy their own version of this classic recipe!
