Falafel – A Tasty Middle Eastern Treat for the Whole Family If you’re looking for a tasty, healthy and filling meal that is sure to please the whole family, look no further than falafel. Falafel is a traditional Middle Eastern dish that is made from chickpeas or fava beans that have been mashed and mixed with spices such as cumin and coriander. The mixture is then formed into small balls or patties, deep fried and served hot. Falafel can be served as a main course or side dish, wrapped in pita bread with vegetables, hummus, tahini or other toppings. As a stay-at-home parent, I’m always on the lookout for easy meals that are both healthy and delicious. Falafel is the perfect option – not only is it quick to prepare, but it’s also full of nutritious ingredients like chickpeas and spices. And best of all, my kids love it! They love helping me form the little falafel balls before we fry them up, as well as deciding which vegetables to add to the wrap. I’ve been making falafel from scratch for years now, but there are also some great pre-made mixes out there if you’re in a rush or don’t have all the ingredients on hand. I find that either way it turns out delicious. The story of falafel goes back centuries, though its exact origin remains unknown. One popular version of the story tells of a poor Arab man who was looking for a way to make a hearty meal out of what little he had – namely chickpeas and spices. He formed them into small balls and deep fried them – thus creating the first falafel! Ingredients: 1 cup dried chickpeas (or 1 can chickpeas) 1 small onion 2 cloves garlic 2 tsp cumin 2 tsp coriander 1 tsp baking powder Salt & pepper to taste Vegetable oil for frying Pita breads & toppings to serve (optional) Instructions: 1. If using dried chickpeas, start by soaking them overnight in plenty of cold water. Drain and rinse well before using. 2. Add the chickpeas to a food processor along with the onion, garlic, cumin, coriander and baking powder. Pulse until everything is combined but still slightly chunky (you don’t want it too smooth). 3. Season with salt and pepper then shape into small balls or patties (depending on your preference). 4. Heat the vegetable oil in a large saucepan over medium heat until hot but not smoking. Fry the falafel in batches until golden brown on both sides (about 2-3 minutes per side). 5. Serve hot with pita breads and your choice of toppings such as hummus, tahini or vegetables. Enjoy!
