Paella – A Stay at Home Parent’s Dream Dish As a stay at home parent, I often find myself in the kitchen at some point in the day. Whether it’s making a quick breakfast before the kids get up, or preparing dinner after the little ones have gone to bed, I am always looking for new dishes to make for my family. This is why I love paella. Not only is it a delicious one-pot meal that everyone in my family loves, but it is also incredibly easy to make. When I first tried paella, I was surprised by how much flavor was packed into this simple dish. It’s made with saffron-infused rice, vegetables, shrimp, and chicken and cooked together in a flavorful broth. The combination of ingredients makes a delicious and filling meal that can easily feed an entire family. The great thing about paella is that you can easily switch up the ingredients to make it your own. For example, you could add chorizo and clams to give it a more traditional Spanish flavor. One of my favorite stories about paella is one my parents used to tell me when I was a child. My father used to tell me about his own paella recipe that he would make for special occasions growing up in Spain. He would take the traditional ingredients – rice, chicken, shrimp, and vegetables – and then add his own personal touch by adding chorizo sausage and clams to the mix. It was always a hit with his family and friends! Paella has become one of my go-to dishes as a stay at home parent because it is so easy to make and so delicious. It also allows me to get creative with my ingredients so I can create unique flavors for my family every time we have it for dinner. Plus, it’s an excellent way to sneak some veggies into my kids’ meals – something that can be hard for picky eaters! So if you’re looking for an easy and delicious meal to try out as a stay at home parent, give paella a try! Here is my version of this classic dish: Ingredients: 2 tablespoons olive oil 1 onion, diced 2 cloves garlic, minced 2 cups long grain white rice 1 teaspoon smoked paprika 1 teaspoon saffron threads 3 cups chicken broth 1 red bell pepper, diced 1/2 cup peas 1/2 pound cooked shrimp 1/2 pound cooked chicken Salt & pepper to taste Instructions: 1. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until soft and fragrant, about 3 minutes. Add rice, paprika, and saffron threads and cook until all grains are coated in oil, about 2 minutes more. 2. Pour in chicken broth and bring to a boil over high heat. Once boiling, reduce heat to low and simmer for 15 minutes until rice is tender and liquid has been absorbed. 3. Add bell pepper, peas, shrimp and chicken pieces; season with salt & pepper to taste; stir well then cover skillet with lid or foil paper; continue cooking over low heat for an additional 10 minutes or until vegetables are tender but not mushy. 4. Serve paella hot with your favorite side dishes such as salad or crusty bread; enjoy!
