Ingredients: 1 lb. raw, deveined shrimp 4 cloves garlic, minced 1/4 cup olive oil 1/4 cup white wine 3 tablespoons lemon juice 2 tablespoons capers 1/2 teaspoon red pepper flakes 2 tablespoons butter 2 tablespoons fresh parsley, chopped Salt and pepper to taste My family loves shrimp scampi because it's a delicious way to get a healthy protein into our diets without spending too much time cooking. We start by heating the olive oil in a large skillet over medium heat. Once the oil is hot, we add the garlic and cook it until fragrant – about one minute. Then we add the shrimp and cook until they are almost done – about three minutes. We then add the white wine, lemon juice, capers, red pepper flakes, and butter and stir to combine. We reduce the heat to low and let it simmer until the sauce thickens – about five minutes. Finally, we season the shrimp with salt and pepper to taste before adding the parsley and stirring to combine. This dish takes less than 15 minutes from start to finish!
