Pork Belly with Roasted Vegetables As a stay-at-home parent, I know how hard it can be to find the time and energy to make dinner for the family. I’m always looking for new and delicious recipes that are easy to make and don’t take too long. This pork belly recipe is one of my favorites and I love to serve it with roasted vegetables. The pork belly is tender, succulent, and full of flavor while the vegetables provide a nice crunchy contrast. It’s a great meal for entertaining or just for a cozy evening at home with the family. Ingredients: 2 pounds pork belly, cut into 2-3 inch cubes 1 large onion, diced 3 cloves garlic, minced 1 tablespoon rosemary, chopped 2 tablespoons olive oil 1/2 cup white wine 2 cups carrots, peeled and cut into 1 inch pieces 3 cups potatoes, peeled and cut into 1 inch cubes 1/4 cup parsley, chopped Salt and pepper to taste Instructions: 1. Preheat oven to 375F. 2. Heat olive oil in a large oven-safe skillet over medium-high heat. 3. Add pork belly cubes and cook until golden brown on all sides, about 8 minutes. 4. Add onion, garlic, rosemary, salt and pepper to the pan and cook until softened, about 5 minutes. 5. Deglaze the pan with white wine and let simmer for 2 minutes. 6. Add carrots and potatoes to the skillet and stir everything together until well combined. 7. Place skillet in preheated oven and roast for 30 minutes or until pork belly is cooked through and vegetables are tender. 8. Remove from oven and sprinkle with parsley before serving. Making this dish is an absolute joy! The smell of the pork belly roasting in the oven fills my kitchen with an amazing aroma that brings everyone in my family running to the table! There’s nothing quite like sitting around the table enjoying a delicious meal that was created together as a family – it’s one of those moments that I will always treasure as a stay at home parent! This pork belly recipe is definitely going into my regular rotation – it’s easy to make, full of flavor, and leaves us feeling satisfied after dinner!
