In a medium bowl, whisk together the soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes. Set aside. 2. Heat the oil in a large skillet over medium heat. Add the chicken and cook until golden brown, about 5 minutes. Add the shrimp and cook for another 3 minutes. Stir in the scallions and cook for another minute. Pour the soy sauce mixture into the skillet and bring to a simmer. Simmer until the sauce has reduced slightly. Remove from heat. 3. Meanwhile, bring a large pot of salted water to a boil over high heat. Add the egg noodles and cook according to package instructions for al dente doneness (about 8 minutes). Drain the noodles in a colander and rinse with cold water until cool. Set aside. 4. Heat a large skillet over medium heat and add the snow peas or snap peas. Cook until just tender, about 3 minutes. Remove from heat and set aside. 5. To assemble the stir-fry: Place the cooked egg noodles in a large bowl with the cooked chicken and shrimp mixture from step 2, cooked snow peas or snap peas from step 4, sesame seeds (if using), and reserved soy sauce mixture from step 1; toss everything together until evenly combined.
