In a medium bowl, whisk together the soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes. Set aside. 2. Heat the oil in a large skillet over medium heat. Add the chicken and cook until golden brown, about 5 minutes. Add the shrimp and cook for another 3 minutes. Stir in the scallions and cook for another minute. To assemble the stir-fry: Place the cooked egg noodles in a large bowl with the cooked chicken and shrimp mixture from step 2, cooked snow peas or snap peas from step 4, sesame seeds (if using), and reserved soy sauce mixture from step 1; toss everything together until evenly combined.
