Beef and Green Bean Stir-Fry: An Easy Recipe for Stay-at-Home Parents
As a stay-at-home parent, I know how hard it can be to make a delicious and healthy dinner for the family on a busy night. That’s why I love this dish, beef and green bean stir-fry. It’s a one-pot meal that’s full of flavor, easy to make, and ready in minutes. Plus, your kids will love it!
This dish is based on a classic Chinese recipe, but I’ve added a few of my own twists. The results are a savory dish that’s sure to please picky eaters. To make it even better, I like to use grass-fed beef and organic green beans. But you can use whatever ingredients you have on hand. Let’s get started!
Ingredients:
1 pound of grass-fed beef (such as sirloin or chuck roast)
2 tablespoons of olive oil
1 large onion
1 red bell pepper
2 cloves of garlic
1 teaspoon of freshly grated ginger
1 teaspoon of sesame oil
2 tablespoons of soy sauce
2 teaspoons of brown sugar
1/4 teaspoon of red pepper flakes (optional)
2 cups of fresh green beans
Salt and pepper to taste
Directions:
1. Heat the olive oil in a large skillet over medium heat. Add the beef and cook for about 5 minutes until the meat is browned on the outside but still slightly pink inside. Remove the beef from the skillet and set aside.
2. Add the onion, bell pepper, garlic and ginger to the skillet and cook until softened, about 3 minutes. Then add the sesame oil, soy sauce, brown sugar and red pepper flakes (if using). Stir everything together until combined.
3. Add the cooked beef back into the pan along with the green beans. Cook everything together for about 5 minutes until the beans are tender but still crisp.
4. Season with salt and pepper to taste then serve warm with cooked rice or noodles. Enjoy!

As I was prepping this dish one evening after a long day with my kids, I couldn’t help but think back to my childhood days in China when my mom would make this exact same dish for us every week night. It was always such a comforting meal – full of flavor and nutrients – and it made me feel so loved knowing that she had taken time out of her day to make something special for us.
