Shrimp and Corn Soup: A Comforting Recipe for a Stay at Home Parent As a stay at home parent, it’s hard to find the time or energy to prepare meals that are both delicious and nutritious. That’s why I’m so excited to share my favorite go-to recipe: Shrimp and Corn Soup! This comforting and easy-to-make soup is both satisfying and healthy. It’s also packed with flavors that will have your family begging for more. I first discovered this soup when I was out of town on a business trip. A local restaurant served Shrimp and Corn Soup as an appetizer and I instantly fell in love with the combination of flavors. Since then, it has become a staple in my family’s kitchen! Ingredients: 1 lb large shrimp, peeled and deveined 2 tablespoons olive oil 1 onion, chopped 2 cloves garlic, minced 2 cups vegetable broth 1 can (15 oz) corn, drained 1 can (15 oz) diced tomatoes, drained 1 teaspoon dried oregano 1 teaspoon dried basil Salt & pepper to taste 2 tablespoons fresh parsley, chopped (for garnish) Instructions: 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Add the shrimp to the pot and cook until they turn pink, about 3 minutes. 3. Add the vegetable broth, corn, tomatoes, oregano and basil. Bring to a boil then reduce to a simmer. Simmer for 15 minutes or until the soup is slightly thickened. 4. Season with salt and pepper to taste then remove from heat. Serve in bowls garnished with fresh parsley if desired. Enjoy!
