"Whip Up an Easy Weeknight Dinner with This Shrimp and Tomato Casserole!"
Shrimp and Tomato Casserole: A Recipe for Stay-At-Home Parents As stay-at-home parents, we often struggle to find new recipes that are tasty, easy to make, and affordable. One of our favorite dishes is Shrimp and Tomato Casserole. It’s an easy meal that takes less than an hour to make and is sure to please everyone in the family. Ingredients: • 2 tablespoons olive oil • 1 small onion, diced • 2 cloves garlic, finely chopped • 1 pound medium shrimp, peeled and deveined • 1/2 teaspoon dried oregano • 1/2 teaspoon dried basil • 1/4 teaspoon red pepper flakes • Salt and freshly ground black pepper, to taste • 2 cups diced tomatoes • 2 cups cooked white rice • 2 tablespoons freshly chopped parsley leaves • 1/2 cup shredded mozzarella cheese • 1/4 cup grated Parmesan cheese Instructions: 1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish with olive oil. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Add shrimp and cook for 3 minutes, until shrimp is pink and cooked through. Season with oregano, basil, red pepper flakes, salt, and pepper. 3. Add tomatoes to the skillet and cook for 5 minutes more. Stir in cooked rice and parsley until thoroughly combined. Pour into the prepared baking dish. Top with mozzarella and Parmesan cheese. 4. Bake for 25 minutes or until cheese is melted and bubbly. Serve hot. Enjoy! We love this dish because it’s quick and easy but still full of flavor! Plus it’s a great way to use up any leftover rice you may have in the fridge - just use it instead of cooking fresh rice for this recipe! We also like that it’s a balanced meal - with protein from the shrimp, carbs from the rice, healthy fats from the olive oil, and vitamins from the tomatoes - all in one dish! When we first created this recipe for our family many years ago when our kids were much younger (and pickier!), we had to get creative in order to make sure they would eat something healthy but still enjoy it too! We came up with this delicious Shrimp and Tomato Casserole recipe and it quickly became one of our family favorites! Our kids still ask for it whenever they come home for a visit - no matter how old they are now!
