Grilled Shrimp with Cilantro and Lime
As a stay at home parent, I often find myself searching for creative, healthy recipes that my whole family will enjoy. This grilled shrimp with cilantro and lime is one of our favorites. It’s easy to make and only requires a handful of ingredients that you likely already have in your pantry. Plus, it’s packed with flavor! Ingredients:
• 1 pound of large shrimp, peeled and deveined
• 2 cloves of garlic, minced
• 2 tablespoons olive oil
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• 1/4 teaspoon salt
• 1 tablespoon freshly squeezed lime juice
• 2 tablespoons chopped cilantro
Instructions:
1. Preheat the grill to medium-high heat. If you don’t have a grill, you can cook the shrimp in a skillet on the stovetop over medium-high heat.
2. In a medium bowl, mix together the garlic, olive oil, cumin, chili powder, salt and lime juice to form a marinade. Add the shrimp to the bowl and stir until all of the pieces are coated in marinade.
3. Thread the shrimp onto metal skewers or wooden skewers that have been soaked in water for at least 30 minutes.
4. Place the skewers on the preheated grill and cook for 2-3 minutes per side, or until the shrimp are cooked through. Be sure to turn them halfway through cooking so they don’t burn.
5. Remove the skewers from the grill and transfer to a serving plate. Sprinkle with chopped cilantro and an extra squeeze of fresh lime juice before serving. -1 teaspoon smoked paprika
-1 teaspoon oregano
-1/2 teaspoon salt
-1/4 teaspoon freshly ground black pepper
-Metal or wooden skewers (if using wooden skewers, soak in water for 30 minutes before using)Instructions:
1. Preheat the grill or oven to 400°F.
2. In a large bowl, combine the shrimp, bell peppers, red onion, zucchini, olive oil, garlic, smoked paprika, oregano, salt, and pepper. Toss until everything is evenly coated.
