Shrimp and Leek Stir-Fry: A Stay At Home Parent’s Guide to Delicious and Easy Meals

-1 teaspoon of sugar

Instructions:
1. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the leeks and garlic and cook for 3 minutes or until softened.
2. Add in the shrimp, soy sauce, sesame oil, rice vinegar, sugar, ginger, salt and pepper. Stir everything together until combined.
3. Cook for another 5 minutes or until the shrimp is cooked through.
4. Serve over hot steamed jasmine rice or quinoa for a complete meal!

The best part was that I had made enough to have leftovers for lunch or dinner later in the week – bonus!
