Ingredients:

-1 pound of shrimp (peeled and deveined)
-1 tablespoon of olive oil
-1 red bell pepper (diced)
-1 yellow bell pepper (diced)
-1 zucchini (sliced)
-1 cup of mushrooms (sliced)
-1 cup of cherry tomatoes (halved)
-2 cloves of garlic (minced)
-2 tablespoons of fresh parsley (chopped)
-2 tablespoons of white wine
-Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the shrimp and sauté for 2 minutes.

2. Add the bell peppers, zucchini, mushrooms, cherry tomatoes, garlic, and parsley to the skillet. Stir everything together and cook for 5 minutes.

3. Add the white wine to deglaze the pan. Simmer for 2 minutes until the liquid has reduced slightly.
