Make Shrimp and Vegetable Quesadillas in Minutes: The Perfect Stay-at-Home Parent Recipe
Shrimp and Vegetable Quesadillas - A Fun Stay-at-Home Parent Recipe As a stay at home parent, I am always looking for creative and delicious meals to make for my family. One of my favorites is Shrimp and Vegetable Quesadillas. This meal is easy to make and packed full of flavor! Not only is this a delicious meal, but it can be ready in under 30 minutes, making it perfect for busy parents who need to get dinner on the table fast. The ingredients needed for this recipe are simple and include: one pound of shrimp (peeled and deveined), one red bell pepper (diced), one green bell pepper (diced), one onion (diced), two cloves of garlic (minced), two tablespoons of olive oil, one teaspoon of chili powder, one teaspoon of cumin, one teaspoon of smoked paprika, one-half cup of chicken broth, two tablespoons of lime juice, two tablespoons of chopped fresh cilantro, four large flour tortillas, and shredded cheese. To begin making the meal, heat the olive oil in a large skillet over medium heat. Add the diced onions and cook until they are softened. Then add the garlic and cook for an additional minute. Next add in the diced bell peppers, chili powder, cumin and smoked paprika. Stir everything together until it’s combined and cook for about 5 minutes or until the vegetables are softened. Next add the shrimp to the skillet along with the chicken broth and lime juice. Cook for about 4-5 minutes or until the shrimp are cooked through. Finally stir in the chopped fresh cilantro. To assemble your quesadillas, lay out each flour tortilla on a flat surface. On half of each tortilla sprinkle some shredded cheese and then spoon some of the shrimp and vegetable mixture on top. Fold each tortilla in half so that all edges are sealed together. Heat a large skillet over medium heat with a bit of oil or butter. Place each quesadilla in the skillet and cook each side until golden brown and crispy. Serve with some fresh salsa or guacamole if desired. Now you have a delicious meal that your whole family can enjoy! I recently made this recipe for my family and it was a hit! My husband especially enjoyed it as he loves any kind of Mexican food!
